How to Use This Tool

How the Numbers Are Calculated
The calculator uses average cholesterol values for common baking ingredients. These values are based on USDA FoodData Central estimates and are meant for meal planning, not clinical precision.
The core calculation is simple:
Total cholesterol = (butter in grams × 2.15) + (whole eggs × 186) + (whole milk in ml × 0.10) + (cheddar cheese in grams × 1.05) + (cooked sausage or ground meat in grams × 0.85) + (cooked bacon in grams × 1.10)
Then the tool calculates cholesterol per roll = total ÷ batch size and % Daily Value = cholesterol per roll ÷ 300 × 100.
Worked Example
Brioche roll recipe (6 rolls): 120 g butter, 4 large eggs, 60 ml whole milk.
- Butter: 120 × 2.15 = 258 mg
- Eggs: 4 × 186 = 744 mg
- Whole milk: 60 × 0.10 = 6 mg
- Total batch cholesterol = 1,008 mg
- Per roll = 1,008 ÷ 6 = 168 mg
- % DV per roll = 168 ÷ 300 × 100 = 56%
Compare that with a plain dinner roll made with 40 g butter and 120 ml whole milk across 6 rolls: (86 + 12) ÷ 6 = about 16 mg per roll. That dramatic difference comes mostly from the eggs and the much higher butter content in brioche.
Tips for Accurate Estimates
- Use weight in grams for butter, cheese, and meat. Volume measurements like cups or tablespoons are less precise for cholesterol calculations.
- Count whole eggs including the yolk. Egg whites contain almost no cholesterol, but this tool assumes you're using the whole egg.
- If you brush rolls with an egg wash, include that egg in the egg field. One egg brushed over 6 rolls adds about 31 mg of cholesterol to each roll.
- For low-fat or skim milk, the cholesterol contribution is smaller. This tool uses 3.25% whole milk.
- If your recipe uses cream cheese, sour cream, or heavy cream, those add cholesterol too. The built-in ingredient list covers the most common roll ingredients, but specialty fillings will need to be accounted for separately.
